Sunshine, watermelon, and a glass of Rosé... can you think of any other combinations that scream SUMMER?! So easy, it's hard to even call this a 'recipe' but this simple yet unforgettable combination of fresh watermelon and garden mint is sure to elevate any meal when perfectly paired with our Rosé.
Always a fan favourite, our Rosé is brimming with bright field strawberry and pink citrus flavours that perfectly compliment the refreshing flavours of watermelon, lime, mint, and salty feta. Just add your favourite grilled protein such as Blackened or Garlic Crusted Salmon or Chicken, or Shrimp and you have a combination that is fresh and healthy.
Ingredients:
1/2 Large Watermelon - Chilled
1 Cup of Mint leaves
100g of Fresh Goat's Feta
2 Limes
Olive Oil - to taste
Salt and Pepper to taste
Directions:
Cut watermelon into 3/4" cubes and place in a large bowl. Wash, pick and chop mint leaves and toss into bowl with watermelon. Zest the two limes into the bowl and add all of their juice.
Crumble feta atop salad and season with salt and pepper to taste. Drizzle with olive oil if desired. Toss to combine and serve next to your favourite grilled protein, alongside a tall glass of our crisp Rosé.
