Winemaker Notes
Hand harvested, crushed and destemmed. Cold soaked for 3 days prior to a quick fermentation. Aged 12 months in 30% new French oak. No battonage to maintain purity of fruit. The wine was then racked once post malolactic fermentation and prior to final bending of the finest barrels.
