Blue Cheese Butter

Looking to level up your grilled steak game this summer? This blue cheese butter is our go-to for making an everyday BBQ feel like a restaurant-quality indulgence. It’s rich, punchy, and irresistibly creamy — and just like a good bottle of wine, it only gets better with time (in the fridge, that is).

Made with the likes of St. Agur or Cashel Blue, both known for their lush texture and mellow tang, this compound butter melts beautifully over hot steak, burgers, or even grilled portobellos. And when paired with one of our bold reds? Heaven.

Ingredients

  • 100g St. Agur or Cashel Blue cheese (crumbled)
  • ½ cup unsalted butter, softened to room temperature
  • 1 small clove fresh garlic, finely grated
  • Freshly ground black pepper, to taste
  • A small pinch of sea salt, if needed (depends on the saltiness of your cheese)

Instructions

  1. Soften the butter. Leave your butter out on the counter for 20–30 minutes until it’s soft but not melted. If you're in a rush, cut it into small pieces to speed things up.
  2. Combine everything. In a bowl, add the softened butter, crumbled blue cheese, grated garlic, and pepper. Mix it all together with a fork — don’t overmix, a few streaks of cheese are a good thing!
  3. Shape and chill. Spoon the mixture onto a sheet of plastic wrap, roll into a log (like a sliceable tube), and twist the ends to seal. Chill in the fridge for at least an hour until firm.
  4. Serve. Cut off thick coins of the butter and place them on sizzling steaks, resting roasts, or grilled veggies just before serving.
