Mexican Style Street Corn with Lava White
Summer weather is here to stay, and we can't think of anything that says "Summer" more than fresh corn on the cob! Whether you are enjoying this side dish alongside your favourite BBQ fare, or pairing it with tacos on a Tuesday, this quick and easy recipe is a fantastic way to dress up a classic fresh summer dish! We highly recommend pairing your spicy cobs with our Lava White - an ideal summer sipper that is perfect on a hot day - and can stand up to the subtle chili heat of the dish.
6 cobs of corn
1/4 cup of Mayonnaise
1/4 cup of crumbled Fetta or Cotija cheese
1 bunch of Cilantro
Chili Lime Salt
Ingredients For Chili Lime Salt:
1 Lime - Zested, reserve wedges for garnish
1 Tbsp Flakey sea salt such as Fleur de Sel
1 tsp chilli powder
1 tsp paprika
Combine the salt, lime zest and chili powder in a small bowl. Use immediately
Bring 2L of salted water to a boil. Once boiling, add corn and cook for 3-6min or until tender and colour has intensified. Chop cilantro for garnish. Remove corn from water and allow to cool slightly. Spread mayo onto corn and season with chili lime salt. Finish with crumbled feta and cilantro as desired!
