Production Notes
100% Chardonnay, the fruit for this Brut style Blanc de Blancs was hand harvested, and pressed using Champagne cycle. The cool 17-day stainless steel ferment was followed be a rest on fine lees for 3 months after first racking with no battonage. Secondary ferment in bottle started on June 7, 2021. Aged an additional 12 months on less prior to disgorging.

What a great addition to the VH lineup - a one-block Blanc de Blanc. This one shows a nice pale yellow colour similar to chrysanthemum tea. Only a few small bubbles visible but they are there on the palate at the right amount. The nose is fruity and floral with green apple, citrus, and white blossoms. On the palate there is good acidity, just a hint of perceived sweetness to keep in balance, flavours of tart green apple and citrus, good concentration, and a long finish. I think this could have benefitted from an additional 12 months on lees but it is nonetheless a well-made and very enjoyable champagne-style wine, fit for any celebration or just because!
Best dry white wine in the country. I belong to their wine club so get a shipment 3-4 times a year.
